Regal Taco

Serves 2


  • Regal Springs Tilapia Fillets – 2 halved lengthways
  • 3tbs Veg Oil
  • Lettuce – sliced
  • Avocado (1) – smashed and mixed with juice of 1 lime, 1 red chilli and ¼ red onion very finely diced and 1tbs olive oil, salt & pepper
  • Salsa – finely diced tomato (1) and ½ red onion, chopped handful of coriander leafs and 1tbs jalapenos and 1tbs of olive oil. Season
  • Sour cream – add lime juice and a dash of chilli powder if desired
  • Extra coriander leafs
  • Extra jalapenos
  • 4 Taco Shells heated


  1. Heat oil in a heavy based frypan until smoking.
  2. Back off the heat to med/high.
  3. Cook the fillets for no more than 2 minutes each side and remove and season.
  4. Compile Taco with your favourite mix. Top with smashed avocado sour cream, coriander leafs and jalapenos.
  5. Munch the Taco.
