Regal Taco Boats

with Mango Salsa, Serves 2


  • Regal Springs Tilapia Fillets – 2 halved lengthways
  • 3tbs Veg Oil
  • Lettuce – sliced
  • Mango salsa – mix 1 mango diced 1cm cubes, ½ red onion, ½ red chilli and ½ tomato all finely diced, a handful of coriander leafs chopped, 1tbs peanut oil, juice of 1 lime and 1tsp sugar. Season
  • Sour cream – add lime juice and a dash of chilli powder if desired.

  • Jalapenos to serve
  • 4 Taco Boats warmed.


  1. Heat oil in a heavy based frypan until smoking. Back off the heat to med/high.
  2. Cook the fillets for no more than 2 minutes each side and remove and season.
  3. Break up the fillets and fill boats with ingredients of choice. Top with mango salsa and jalapenos.
