Regal Burrito

Serves 2


  • Regal Springs Tilapia Fillets – 2 halved lengthways
  • 3tbs Veg Oil
  • Lettuce – sliced
  • Avocado (1) – smashed and mixed with juice of 1 lime, 1 red chilli and ¼ red onion very finely diced and 1tbs olive oil. Season
  • Salsa – finely diced tomato (1) and ½ red onion, chopped handful of coriander leafs and 1tbs jalapenos and 1tbs of olive oil. Season
  • Sour cream – add lime juice and a dash of chilli powder if desired
  • Extra coriander leafs
  • Extra jalapenos
  • 4 Burritos wraps heated


  1. Heat oil in a heavy based frypan until smoking. Back off the heat to med/high.
  2. Cook the fillets for no more than 2 minutes each side and remove and season.
  3. Lay fillets and ingredients of choice across the burrito and roll up tightly. Slice in 3, stand on end and top with extra smashed avocado and coriander leafs.
